A special double fermentation micro-lot from The Zukuka Bora Coffee Project

Process: Pre & Post Pulp Fermentation

Grown on the fertile slopes of Mount Elgon in eastern Uganda, this coffee comes from the Sipi region, where smallholder farmers around the village of Tangwen, supported by the Zukuka Bora Coffee Project, cultivate coffee at high elevations in rich volcanic soils. The combination of high altitude, steady rainfall, and careful selection of ripe cherries allows for slow sugar development, resulting in a cup with clarity and vibrant character.

Processed using a double-stage anaerobic washed method, this coffee undergoes fermentation both before and after pulping. Whole cherries are first fermented in sealed tanks for 7 days to build depth and fruit complexity, before being pulped and dry fermented for 2 days to refine clarity and structure before being carefully washed and dried.

This coffee delivers a layered, nuanced, and elegantly balanced cup that reflects both the innovation of the processing and the exceptional terroir of eastern Uganda.
