Pax takes its name from the Latin word for peace. This beautiful Colombian coffee from Huila is decaffeinated using a sugarcane process, which relies on a naturally occurring compound derived from fermented sugarcane to gently remove caffeine. The process preserves the coffee’s natural flavour and sweetness, without the use of harsh synthetic solvents. The sugarcane is surplus grown in Colombia, and because the coffee is both grown and decaffeinated there, it travels minimal miles before being shipped to the UK - a win for both planet and palate.
In the cup, expect chocolate, toasted nuts, and golden syrup, with a smooth body and gentle, lingering finish. Comforting, balanced, and quietly satisfying.
